A farmer from this region made a remarkable discovery 30 years ago when he stumbled upon the lavender fields of Provence. He realized that this crop was perfectly suited for the lands surrounding his town. Unfortunately, agricultural activity in the area has been on the decline since then.
In the Brihuega region, approximately a thousand hectares of lavender have been cultivated, and a facility for processing and production has been set up.
The ideal time to enjoy the beauty of lavender fields is in July. While the specific dates can change based on weather, the start of summer typically signals when they begin to bloom. Similar to cherry blossoms, lavender flowers are short-lived, usually fading by the end of July or early August at the latest.
